Moonbeams, Malts & Master Blenders: Crafting Bespoke Whiskies at the HKJC Sha Tin Mid-Autumn Carnival

We brought our interactive Whisky Blending Workshop to the Sha Tin Clubhouse of The Hong Kong Jockey Club as part of their Mid-Autumn Celebration Carnival (中秋節歡樂嘉年華). Beneath glowing festival lanterns, illuminated rabbit installations, and panoramic clubhouse views, members and families gathered for a celebratory weekend uniting seasonal reunion traditions with the hands-on art of Scottish whisky making.

Blending is where olfactory science meets artistic intuition. Transforming our workshop station into an active blending studio equipped with 250 ml graduated cylinders, beakers, and regional flavour wheels, we invited club members to step into the shoes of a master blender to craft their own personalized 200 ml bottle from scratch.

To give each member the building blocks of an exceptional blended malt, we curated three cornerstone single malts spanning Scotland’s iconic flavor pillars:

1. The Arran Malt 10 Year Old (Island | 46.0% ABV)

  • The Blending Role: The Orchard Fruit & Citrus Foundation.

  • The Profile: Crisp, creamy, and vibrantly fruit-driven.

  • The Experience: Serving as the bright, aromatic base of the blend, Arran delivered aromas of crisp green apples, ripe orchard pears, juicy nectarines, zesty lemon oil, and candied citrus peel. On the palate, its thick, creamy, and oily mouthfeel provided the essential structure needed to carry heavier wood and smoke components.

2. The Macallan 12 Year Old Sherry Oak (Speyside | 40.0% ABV)

  • The Blending Role: The Sherry Wood & Mid-Palate Weight.

  • The Profile: Decadent, syrupy, and warmly spiced.

  • The Experience: Matured exclusively in sherry-seasoned oak casks, Macallan contributed rich aromas of sultanas, fresh apple blossoms, golden syrup, and tropical fruit. On the palate, hot bakery pastries, orange marmalade, and barley sugar sweetness brought depth, rounding out the sharper edges of the recipe.

3. Bowmore 12 Year Old (Islay | 40.0% ABV)

  • The Blending Role: The Gentle Smoke & Maritime Accent.

  • The Profile: Coastal, honeyed, and delicately peated.

  • The Experience: Rather than aggressive medicinal smoke, Bowmore offered a soft, rounded peat profile reminiscent of a dying beach bonfire. On the tongue, honeyed barley and warm vanilla fudge mingled with subtle coastal brine, giving blends an elegant, lingering finish.

Armed with trial sheets, members tested ratios through multiple combinations. Guests quickly discovered how micro-adjustments shifted the entire balance—how just 10 ml of Bowmore could introduce smoldering campfire warmth across Arran’s orchard fruits, or how an extra measure of Macallan tied the components together with sweet holiday spice.

Once each formula was perfected and measured in the cylinders, members bottled their whisky and personalized custom front labels featuring their name and date. To complete the artisanal experience, each bottle was hand-dipped into molten crimson sealing wax, creating an exclusive, festival-ready keepsake.

A heartfelt thank you to the Hong Kong Jockey Club team for organizing such a vibrant Mid-Autumn carnival, and to all the members whose enthusiasm, keen noses, and blending creativity made both days an absolute joy.

May your Mid-Autumn season be filled with sweet reunion, bright full moons, and a glass that balances warmth, smoke, and sweetness in perfect harmony—Slàinte, bespoke drams, and crimson wax seals!
