We celebrated The Hong Kong Jockey Club Members' Day 2026 inside the JC Box at Sha Tin Racecourse with an interactive Whisky Blending Workshop. Moving beyond a traditional tasting, this session transformed our curved blue bar into an active master blender’s laboratory, placing graduated cylinders, pipettes, and single malts directly into the hands of club members.

Blending represents the ultimate test of sensory balance—harmonizing triple-distilled floral lightness, rich Spanish sherry wood, and fierce coastal smoke into a seamless composition.

To construct their bespoke 200 ml expressions, members worked with three contrasting cornerstone single malts:

1. Auchentoshan 10 Year Old 2013 – Douglas Laing Old Particular (Lowland | 48.4% ABV)

  • The Blending Role: The Floral & Citrus Lift.

  • The Profile: Clean, delicate, and vibrant. Fresh aromas of white peach, manuka honey, and cream led into candyfloss, peppermint, and light floral accents, providing a crisp, refreshing top note for each formula.

2. The Macallan 12 Year Old Sherry Oak (Speyside | 40.0% ABV)

  • The Blending Role: The Sherry & Mid-Palate Structure.

  • The Profile: Opulent, velvety, and rounded. Notes of sultanas, fresh apple blossom, and golden syrup flowed into rich marmalade, warm pastries, and barley sugar sweetness, giving custom blends weight and mid-palate depth.

3. Talisker 10 Year Old (Isle of Skye | 45.8% ABV)

  • The Blending Role: The Maritime Smoke & Spice Backbone.

  • The Profile: Coastal, peaty, and peppery. Pungent campfire smoke, brine, and fresh oyster liquor balanced against dark dried fruit and a fiery black pepper finish, adding complexity and a lingering finish.

Guided by the flavour wheel and blending worksheets, members experimented with test trials before measuring out their final formula. The room engaged in spirited debates as guests discovered how just 10 ml more of Talisker could shift a gentle honey-sherry profile into an assertive maritime dram.

Once perfected, each custom blend was funneled into an embossed 200 ml bottle and finished with a personalized label bearing the member’s name. To complete the master blender experience, every bottle was hand-dipped in warm red sealing wax, giving participants their own bespoke, certified collector's piece.

A heartfelt thank you to the Hong Kong Jockey Club team and all the members who joined us in the JC Box for Members' Day 2026.

May your custom formulas mature with grace, your racing picks hit stride in the homestretch, and your personal blends always strike the perfect balance—To unique recipes, red wax seals, and triumphant pours!
