We returned to the glowing neon backdrop of the E105 Lounge at the Hong Kong Jockey Club for our latest regional masterclass: Scotch Whisky Journey – Tastes of the Regions: Islay. Set against the pulse of live race night, the evening moved past the single-note stereotype of heavy smoke to explore how distinct cask maturations reshape coastal peat into contrasting liquid architectures.

To highlight this dynamic, we presented two high-proof Islay heavyweights side by side: a rare sweet-wine-matured farm malt and a muscular, 100-proof sherried independent bottling:

1. Kilchoman Sauternes Cask Matured – 2024 Edition (Islay | 50.0% ABV)

  • The Distillery Craft: Founded by Anthony Wills as Islay’s quintessential farm distillery, Kilchoman conducts every stage from barley to bottle on the island’s rugged west coast. This limited 2024 edition spent its entire maturation in a combination of fresh and refill ex-Sauternes dessert wine barriques, marrying uncompromised farm peat with French oak sweetness.

  • The Profile: Buttery sweetness, grilled tropical fruits, and fragrant floral peat smoke.

  • The Experience: The nose opened with creamy butterscotch, ripe apricot, nectarine, and a distinct draft of salty sea air. On the palate, luscious layers of candied ginger, grilled pineapple, and manuka honey flowed over a rich, oily spirit base, balanced throughout by an undercurrent of smoldering beach bonfire smoke and a long, textural finish.

2. Caol Ila 2012 13 Year Old – Signatory Vintage 100 Proof Edition #70 (Islay | 57.1% ABV)

  • The Independent Curation: Curated by Signatory Vintage under their coveted 100 Proof series, this 13-year-old single cask release was matured in 1st-fill and refill Oloroso sherry butts and bottled unreduced at 57.1% ABV (British 100 proof) without chill-filtration or added colour.

  • The Profile: Ashy peat, coastal brine, smoked meats, and dense Oloroso fruit.

  • The Experience: Pouring deep natural amber, the nose flooded the glass with intense bonfire ash, lemon peel, and maple-cured bacon, framed by dark stewed raisins. At full proof, the palate was muscular and oily, delivering bitter dark chocolate, sticky figs, cracked black pepper, and maritime salt, before fading into an enduring finish of dry wood spice and smoldering coastal embers.

The contrast between Kilchoman's golden Sauternes fruitiness and Caol Ila's dark, sherry-drenched peat sparked spirited debates across the lounge tables. Members analyzed how a few drops of water tamed the high proofs, allowing the subtle nuances of French wine sweetness and Spanish oak to shine through Islay’s raw coastal smoke.

A heartfelt thank you to the entire Hong Kong Jockey Club team for their hospitality, and to all the members whose curiosity and palate sharpness made the night so vibrant.

May your picks navigate the final turn with the fierce momentum of an Atlantic storm, and may your glass always carry the warmth and untamed spirit of Islay’s shores—Slàinte, roaring bonfires, and victorious strides!
