We returned to the Racing Lounge at Sha Tin Racecourse for an exhilarating double-session whisky masterclass amidst the thunder of Group 1 raceday action. With the Centenary Sprint Cup and Stewards' Cup setting a high-stakes backdrop, our masterclass took members behind the scenes of oak architecture to answer a fundamental question of single malt science: What is a Scotch whisky cask, and how does wood chemistry shape liquid gold?

Rather than examining sherry maturation as a one-dimensional profile, our flight pitted two contrasting Speyside heavyweights against each other—comparing a balanced distillery benchmark with a thunderous, independent single-cask powerhouse:

1. The GlenAllachie 18 Year Old (Speyside | 46.0% ABV)

  • The Wood Philosophy: Crafted under the watchful eye of master blender Billy Walker, this expression showcases the art of extended sherry wood maturation, bottled at 46% ABV without chill-filtration or added colour.

  • The Profile: Elegant, velvety, and overflowing with heather honey charm.

  • The Experience: It poured a rich, natural mahogany, opening with aromas of dark cherries, toffee, glazed figs, and warm baking spices. On the palate, luscious dark chocolate, mocha, and candied orange peel mingled with GlenAllachie’s signature heather honey, delivering a wonderfully rounded, warming finish.

2. Speyside (M) 2009 16 Year Old – Signatory Vintage 100 Proof Edition #15 (Speyside | 57.1% ABV)

  • The Independent Curation: Bottled by Signatory Vintage under their coveted 100 Proof series, this single malt was matured for 16 years exclusively in rich Oloroso Sherry Butts and bottled unreduced at 57.1% ABV. Connoisseurs in the room immediately recognized the discreet "(M)" hallmark as hailing from Speyside’s most prestigious luxury distillery.

  • The Profile: Muscular, uncompromised, and drenched in dark Oloroso sherry.

  • The Experience: An absolute titan in the glass. Pouring deep amber, it flooded the senses with dried figs, Christmas pudding, roasted walnuts, and antique leather. On the palate, concentrated notes of dark cacao, spiced molasses, and stewed winter fruits packed an incredible punch, opening up into layers of ginger and polished oak with just a few drops of water.

The masterclass sparked passionate debate across the tables. Members compared the smooth, honeyed elegance of GlenAllachie 18 against the raw, muscular delivery of the 100-proof Signatory Speyside (M), exploring how differing still shapes, spirit cuts, and cask selections dictate wood integration over decades.

A heartfelt thank you to the Hong Kong Jockey Club team for their phenomenal hospitality trackside, and to all the members who brought such sharp palates and vibrant energy to our sessions.

May your picks bolt from the gates with Group 1 power, and may your glass always finish with the bold, unforgettable depth of an unreduced sherry butt—To high stakes, pedigree pours, and champion strides!
